blessed

So often I find myself feeling so completely blessed, and this feeling, this knowledge, is usually brought on by such silly things like how homey my living room looks with just the lamp on or the sun shining through our back yard trees or the sweet repetition of our daily routines. I just feel so thankful for so many little things. Big ones too, of course, but it's the little ones that can really stir my soul. He shows His love in so many many ways, doesn't He?

Yummy made easy

One of my favorite meals to make for the boys and I on the nights when Troy works late is caesar salad and mashed potatoes. Now, before you go and think "that doesn't sound like a complete meal" I will share three points:
1) you can go to many restaurants and order a salad and baked potato. Mashed potatoes consist of the same primary ingredients as a baked one. The only real difference is the cook time. 1 hour vs. 20 minutes. I'm very much a 20 minute cook.
2)the boys LOVE it and I love it and its easy and troy's not home so why on earth would I ever cook something fancy if he's not even gonna be here for me to get wife points? That'd be all kinds of silly. (also, I never do fancy. The queen could come to town and I might serve her salad and baked potatoes.)
3) it's cheap. Cheap is important to me.

Anyway, the other day I was at the store and found that top item. How brilliant is that? All the stuffings for a baked potato in one little container! I'm never gonna use a whole thing of bacon bits or chives and I cant tell you how much sour cream I throw away, so this was all there together! I boiled those potatoes, dumped this tub in, and mashed it up. Poured in a smidge of milk, and, just like that, yummiest potatoes ever!
And I'm sure it's calorie free too! ;)
